From the bag:
This coffee was sourced from small farms among the elevated terrains of Buesaco, Nariño in southern Colombia. Here, the volcanic soil with its high nutrient levels, good water retention, and easy drainage, plus the average temperature of 65°F, provide an optimal environment for producing coffee with distinct mild taste, high acidity, and sweet notes.
After brewing medium to dark roasts for the past few weeks, I was looking for something light and fruity, and this definitely delivers. It is extremely acidic and fruit-forward, with just the right amount of body to smooth things out. It’s even fruitier than the Colombia Nariño from Gracefully that I had last winter, although that was medium roasted, so it’s not really a valid comparison. In spite of the high acidity, it doesn’t taste sour or bitter. The doubled recipe (above) was maybe slightly mellower than most of my single cups, but the difference was subtle. Similar to my immersion recipes with the Switch, the action of stirring left me with a slightly dome-shaped bed. I might just want to swirl it instead, or maybe I could briefly stir after the first pour, and then swirl after I finish pouring, and see if I end up with a more level bed. Whatever the case, I’m really enjoying this bag.
